MUNCHING PEANUT BRITTLE 
1 c. sugar
1/2 c. white corn syrup
1 c. roasted, salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In a 1 1/2 quart casserole dish stir together sugar and syrup. Microwave on HIGH 4 minutes. Stir in peanuts. Microwave on HIGH 3-5 minutes or until brown.

Add butter and vanilla to syrup, blending well. Microwave on HIGH 1-2 minutes more. Peanuts will be lightly browned and syrupy, very hot. Add baking soda and gently stir until light and foaming.

Quickly pour mixture onto a lightly greased cookie sheet, or an unbuttered non- stick coated cookie sheet. Let cool 1/2 to 1 hour. When cool, break into small pieces and store in an airtight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
