CHICKEN SALAD ORIENTAL 
1 1/2 c. boiling water
1 1/2 c. Minute rice
1 sm. onion, sliced or diced
1/3 c. sour cream
2 tbsp. cold water
2 tbsp. finely chopped parsley
1/2 c. red or green pepper, diced
1 tbsp. soy sauce
1/2 tsp. garlic powder
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. ground ginger
1 1/2 c. cubed chicken, cooked
1 (10 oz.) pkg. cut green beans, thawed
1 c. bean sprouts, trimmed

Pour boiling water over rice and onion in 2-quart bowl. Cover and let stand 5 minutes. Mix the sour cream with water, soy sauce, spices and parsley. Stir sour cream dressing over rice. Add remaining ingredients and toss lightly. Each serving less than 350 calories. Yield: 4 servings.
