SHRIMP WITH FETA 
1 1/2 lbs. shrimp
1 c. chopped scallions
1/4 c. olive oil
2 garlic cloves, crushed
1 (28 oz.) can tomatoes, chopped with juice
1/2 c. white wine
2 tbsp. chopped parsley
1/2 tsp. dried oregano
1/2 tsp. sugar
Feta cheese

Shell shrimp raw. Saute onion in oil for 1 minute. Add garlic and cook for 1 minute. Do NOT burn. Add tomatoes, wine, herbs and sugar. Salt and pepper to taste.

Cover and simmer for 30 minutes until very thick. Spoon 1/2 of the sauce into a 9 inch square baking dish. Top with shrimp. Add rest of sauce. Crumble feta cheese on top. Bake at 425 degrees for 15 to 20 minutes. Serve with white rice. 6 servings.
