HASH BROWN OMELET 
1 lb. hash browns
1/3 c. oil
6 eggs, beaten
1 c. ham or chopped bacon
Mushrooms
Green pepper
Onion
1 c. Velveeta cheese

Fry hash browns, onion, and green pepper until potatoes are brown. Drain. Add eggs. Top with mushrooms, meat, and cheese. Cook in covered skillet on low heat approximately 8 to 10 minutes or until cheese melts. Serve at once.
