ORANGE CRUNCH MUFFINS 
1 1/2 c. Grape Nuts cereal
1/4 c. sugar
3 tbsp. orange juice
2 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
2 tbsp. grated orange rind
2 eggs, beaten
1/2 c. honey
1 c. milk
1/4 c. buttermilk or butter, melted

Place 1/2 cup of cereal in food processor or blender and process until finely ground. Add sugar; process to combine. Add 2 tablespoons of the orange juice and process until blended. Set aside.

Mix flour, baking powder and salt. Add remaining cereal and the grated rind. Combine eggs, honey, remaining juice, milk and butter. Add to flour mixture and mix just enough to moisten flour. Fill greased muffin pans 2/3 full. Spoon reserved cereal mixture over each muffin. Bake at 425 degrees for 20 minutes or until golden brown. Makes 12 muffins.
