AUNT EV'S NOANT - PASSOVER NUT
CANDY
 
1 lb. dark honey
1 lb. shelled walnuts, coarsely chopped
1/2 tsp. ground ginger, or to taste
1 tbsp. lemon juice
1 tbsp. grated orange rind, optional
Vegetable oil, for platter

Place honey in heavy saucepan; bring to simmer over low heat. Stir frequently with wooden spoon. Add nuts, ginger, lemon juice; orange rind if desired. Continue to simmer for 1/2 hour, or until honey reaches a dark brown color, and walnuts have absorbed honey. Turn out mixture onto greased platter and spread evenly. Let stand until it cools. Cut with sharp knife.

Note: Recipe works better on non-humid, cool days.
