FRIED HERB TOMATOES 
1 lg. ripe tomato, cut into 1/4" slices
1 1/2 c. crushed herb-seasoned stuffing mix
1 egg, beaten
2 tbsp. vegetable oil
2 tbsp. (1/2 oz.) shredded Cheddar cheese

Coat tomato slices with stuffing mix; dip in egg and thin coat again with stuffing mix.

Heat oil in a heavy skillet. Add tomato slices; cook until brown, turning once. Immediately transfer to serving dish and sprinkle with cheese. Serves 2 or 3.
