BUTTERNUT SQUASH CAKE 
1 1/2 c. sugar
2 eggs
2 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. chopped nuts
1/2 c. shortening
1 c. squash
3 tsp. baking powder
1/2 tsp. salt
3/4 c. milk

Beat together the sugar, shortening and eggs. Add squash and beat. Combine flour, baking powder, baking soda, salt and cinnamon. Add these dry ingredients tot he squash batter along with the milk. Stir in nuts. Pour batter in greased tube pan and bake 30 to 35 minutes.
