CHICKEN - FRIED STEAK WITH WHITE
GRAVY
 
4 cubed steaks
1/2 tsp. salt
1 1/2 tsp. pepper
1 c. flour
2 eggs, lightly beaten
1/4 c. oil
1 c. milk

Season beef with salt. Mix flour with pepper in a large dish. Dredge each steak in flour; dip in beaten eggs, then dredge in flour again. Heat oil in a large skillet. Fry steaks on each side until golden. Drain on paper towels. Pour off all but 2 tablespoons oil. Sprinkle 2 tablespoons of flour mixture into oil. Cook over medium heat 1 minute, scraping brown bits from bottom. Stir in milk slowly until smooth. Cook until thickened. Pour over steaks when serving.

It's better if you eliminate the eggs. Put together salt, pepper, flour and roll beef in it. Fry quickly in oil, move browned steaks aside, add 2 tbsp. flour, salt and pepper to oil, cook til brown, add milk and cook til thick. This is the best!!
