BLACK BEAN BURGER 
61oz of black beans rinsed (4 cans)
1 cup red bell pepper, diced
1 cup green bell pepper, diced
1/4 cup onions, diced
1 tsp garlic powder
1 tsp black pepper
1 tsp paprika
1 tsp chili powder
1 tsp cumin
1 cup Panko breadcrumbs
2 oz salsa
1 egg

Place black beans in a bowl. Using a potato masher, mash half the beans. Mix remaining ingredients with the beans and mix by hand until well blended together.

In a shallow pan, place 2 cups of Panko breadcrumbs for rolling the burgers. Grab 5 oz of the mixture and roll into a ball and form patties. When patty is formed, place in the pan of Panko and continue forming patty until all sides are coated with the breadcrumbs. Place patty on a sheet tray and place tray in freezer until patties are frozen; remove and package in bags to use as individual servings straight from the freezer.

Cooks Note: To cook, sauté in hot pan coated with 1/8-inch olive oil and a few whole cloves garlic until patties are browned and heated through. Patties may also be baked in oven until golden. Serve with extra salsa on the side.
