RED VELVET CAKE 
2 eggs
2 c. sugar
1 c. buttermilk
2 1/2 c. flour
1/2 tsp. salt
1 c. butter
1 1/2 tsp. baking soda
1 tbsp. cocoa
1 tsp. vanilla
1 tbsp. vinegar
2 oz. red cake color

Cream butter and sugar. Add eggs and beat until fluffy. Make paste of vinegar and cocoa and add to mixture. Add dry ingredients alternately with milk. Blend well. Add vanilla and coloring and mix well. Pour into greased cake pans (2) and bake in 350 degree oven for about 30 minutes.

FILLING:

2 tsp. flour
1 c. milk
1 c. butter
1 c. sugar
1 tsp. vanilla

Cook flour, milk on low heat until thick. Set aside and cool completely. Cream butter and sugar; add flour mixture. Beat until it looks like whipped cream. Add vanilla and 1 cup chopped nuts and coconut, then spread on cooled cake.
