CHINESE GARLIC SPARERIBS 
4 lbs. tiny lean spareribs, cut into 1 1/2 inch lengths
1/2 c. soy sauce
1/2 c. red wine vinegar
2 c. brown sugar
2 tsp. dry mustard
2 tsp. grated fresh ginger
4 garlic cloves, pressed

Bake ribs 1 hour on a rack in 350 degree oven. Caramelized sauce: combine next 6 ingredients and cook in skillet or wok for 3 to 5 minutes. Add precooked spareribs and toss until coated with the caramelized sauce. Serve at once. May be reheated in a 350 degree oven. Serves 8. (You may use this sauce coating baked chicken breasts instead.)
