HAWAIIAN CHINESE SPARERIBS 
1 rack of spareribs
1/2 c. ketchup
1/4 c. dry sherry
3/4 c. brown sugar
1 tsp. salt
1 clove garlic, minced
1/2" piece of root ginger or 1 tsp. ginger

Mix the soy sauce, ketchup, sherry, sugar, salt, garlic and ginger.

Rub into meat very well then marinade for 3 hours. Remove ribs and place on rack with a shallow pan under it. Cover bottom of pan with 1/2" of water.

Roast in 350 degree oven for 45 minutes or until tender and browned. Baste with marinade and turn ribs frequently.

Cut into individual ribs (using meat scissors if available) and serve with Chinese mustard and Chinese duck sauce for dunking. Serves 6 to 8.
