AGADITO DE POLLO ( PERUVIAN CHICKEN SOUP) | |
1 lb of chicken (precook, to cut time) 1/2 cup rice 1/2 cup cilantro (puree) 1 cup peas and carrots (frozen) 2 spoons Aji amarillo pureed -(use yellow bell pepper or any yellow chili pepper) puree 2 teaspoon soy sauce 1/2 cup onions (strips) 1 tsp. garlic 2 medium size potatoes, cut into quarters or cubes salt, black pepper and cumin, to taste In a fry pan, slightly heat the oil add onions, garlic, black pepper, cumin and Aji amarillo, stir. Once it's fried until paste-like, add soy sauce, cilantro puree, peas and carrots and chicken pieces. Mix everything together, add the necessary water. Once it boils, add the rice and potatoes.
