COTTAGE CHEESE PIE 
Ready made or homemade graham cracker crust
3/4 c. sugar
3 eggs
16 oz. cottage cheese
1 tsp. vanilla
3 tbsp. sour cream

Buy a small container of sour cream - use 3 tablespoons and save the rest. Try sour half and half or light sour cream to reduce calories.

Blend all of the above ingredients in a blender until smooth. Pour into graham cracker crust. Set oven at 350 degrees and bake for 25 minutes (or until it's set). Take pie out and cool for 10 minutes.

Now take remainder of sour cream and add it to 4 tablespoons of sugar and 1 teaspoon of vanilla. Mix together and spread on top of pie.
