MICROWAVE PEANUT BRITTLE 
1 1/2 c. peanuts, skinned raw or Spanish (canned)
1 c. granulated sugar
1/2 c. light corn syrup (Karo)
Pinch salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda

Mix nuts, sugar, corn syrup and salt in glass bowl with handles. Cook 7 minutes on HIGH. Mixture should bubble and nuts brown. Quickly stir in butter and vanilla. Cook 3 minutes longer.

Add baking soda and stir quickly until foamy. Pour immediately onto greased cookie sheet. Let stand 15 minutes longer. Break up and store in airtight container. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
