PEANUT BUTTER STREUSEL | |
1 Keebler butter flavor ready crust 1/2 c. peanut butter 2/3 c. powdered sugar 1/2 c. sugar 2 tbsp. cornstarch 3 egg yolks, slightly beaten 2 c. milk 1 tbsp. butter 1 tsp. vanilla Brush pie crust with 1 egg yolk and place on cookie sheet. Bake 5 minutes at 400 degrees. Remove from oven, allow to cool. Blend peanut butter and powdered sugar until crumbly. Sprinkle 2/3 of mixture over pie crust. Next mix sugar, cornstarch and slowly add milk. Cook to boiling, reduce heat and cook 2 minutes longer. Blend small amount with remaining yolks and pour back into custard mixture. Cook an additional 2 minutes at low heat, stirring constantly. Remove from heat and add butter and vanilla. Pour into pie shell. Sprinkle remaining peanut butter mixture on top of pie. Broil for 1 minute. Cool and serve. |
