LOW CHOLESTEROL RAISIN OATMEAL
COOKIES
 
1 c. all-purpose flour
1/2 tsp. baking soda
1 tsp. salt
1/4 tsp. cinnamon
1 1/2 c. quick-cooking oats
2 egg whites, slightly beaten
1 c. brown sugar
1/3 c. vegetable oil
1/2 c. skim milk
1 tsp. vanilla
1 c. raisins

Preheat oven to 375 degrees. Sift together flour, soda, salt, and cinnamon. Stir in the oats. Combine egg whites, brown sugar, oil, milk, vanilla, and raisins and add flour mixture; mix well.

Drop batter by teaspoonful on oiled cookie sheet. Bake 12-15 minutes depending on texture desired. Makes about 3 dozen cookies.
