PEACH COBBLER 
2 1/4 tsp. cornstarch
2 1/3 tbsp. brown sugar
1/4 c. cold water
2 c. sweetened sliced peaches
1/2 tbsp. butter
1/2 tbsp. lemon juice

Mix first 3 ingredients; add peaches. Cook and stir until thickened. Add butter and lemon juice. Add biscuit topper (below). Bake at 400 degrees for 20 minutes or until topper is done.

BISCUIT TOPPING:

1/2 c. flour
1/2 tbsp. sugar
3/4 tsp. baking powder
1/8 tsp. salt
1/8 c. butter
1/8 c. milk
1/2 of 1 whole egg

Sift together dry ingredients. Cut in butter until light coarse crumbs. Mix in milk and beaten egg; stir to moisten. Drop by teaspoonful on hot fruit.
