FARMER'S BREAKFAST 
8 med. potatoes
1 lb. bacon
1 onion
1/2 lb. ham (optional)
1/2 lb. cheese
1 dozen eggs
Chives
Salt and pepper
1/4 c. milk

Boil potatoes; peel and cube. Fry bacon until just cooked. Pour off most of grease. Add potatoes and chopped onion to bacon until onion is transparent. Beat eggs, chives, milk, and seasonings.

Pour egg mixture over potato mixture in 9 x 13 pan. Bake, covered, at 350 degrees for 30 minutes. Uncover; sprinkle grated cheese on top. Continue baking until cheese melts and knife inserted in center comes out clean. Serve with salsa.

A wonder Brunch dish. Serves 10-12. Complete with fresh fruit and muffins for a real treat.
