SQUASH CASSEROLE 
6 c. (2 lbs.) squash (yellow or zucchini)
1/4 c. onion
1 c. grated carrots
1 c. sour cream
1 can cream of chicken soup
1 (7 oz.) pkg. stuffing mix (Stove Top or Pepperidge Farm)
1 cube butter

Cook squash, onion and seasonings from package of stuffing mix. Boil 5 minutes; drain. Mix carrots, sour cream and cream of chicken soup together. Melt butter; mix in stuffing. Fold squash, onion mixture, then squash mixture, etc. Bake 30 minutes at 350 degrees.
