WALDORF SALAD COOKIES | |
2 3/4 c. all-purpose flour 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. ground cinnamon 1 1/2 c. firmly packed light brown sugar 1/4 c. real mayonnaise 2 lg. eggs 1 tsp. vanilla 1 1/2 c. coarsely chopped unpeeled red apple 1 c. coarsely chopped walnuts 1/4 c. finely chopped celery In medium bowl stir together flour, baking soda, salt and cinnamon. In large bowl of electric mixer at medium speed, beat together sugar, mayonnaise, eggs and vanilla until smooth. Add flour mixture and at low speed beat until smooth. Stir in apple, walnuts and celery. Drop by level tablespoonfuls, 2 inches apart, on ungreased cookie sheets. Bake in preheated 350 degree oven until lightly browned, 10-12 minutes. With wide spatula remove to wire rack and cool completely. Store in tightly covered container. Makes about 4 dozen cookies. |
