WALDORF SALAD DROP COOKIES 
2 3/4 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1 1/2 c. firmly packed light brown sugar
3/4 c. real mayonnaise
2 lg. eggs
1 tsp. vanilla
1 1/2 c. coarsely chopped unpeeled red apple
1 c. coarsely chopped walnuts
1/4 c. finely chopped celery

In a medium bowl, stir together the flour, baking soda, salt, and cinnamon. In the large bowl of an electric mixer at medium speed, beat together the sugar, mayonnaise, eggs, and vanilla until smooth. Add flour mixture and at low speed, beat until smooth. Stir in the apple, walnuts, and celery. Drop by level tablespoonfuls 2 inches apart on ungreased cookie sheets. Bake in a preheated 350 degree oven until lightly browned, 10 to 12 minutes. With a wide spatula, remove to a wire rack to cool completely. Store in a tightly covered container.
