GRILLED TROUT WITH LEMON BUTTER 
4 to 6 gutted and cleaned, whole sm. trout
Salt
Pepper
Vegetable oil

LEMON BUTTER:

2 tbsp. butter, melted
1/2 tsp. grated lemon peel
1 tbsp. lemon juice
1/2 tsp. Worcestershire sauce

Sprinkle trout cavities with salt and pepper. Brush skin with oil. Prepare lemon butter; mix butter, lemon peel, lemon juice and Worcestershire sauce together.

Brush grill with vegetable oil. Grill fish 3 to 4 inches from medium coals, brushing with lemon butter frequently and turning once; cook until fish flakes easily with fork, about 17 minutes on each side.

Serve with remaining lemon butter.

This tasted very good. Here is a little variation to the recipe:

Add some sliced onion to the top of the trout filets while grilling for more flavour.

Grilling tips: If you are using a gas grill, set heat on medium-high. Put the trout filets skin-side down on the grill. I did not turn the filets for fear of sticking to the grill and losing the fish on the grill. I did not need to turn the fish and moved the fish away from the flame near the end to avoid flare-ups.
