BAKED CARROT-RAISIN MEDLEY 
1/3 c. raisins
1 med. apple, thinly sliced
1 1/2 c. carrots, thinly sliced
1 sm. lemon, cut in half
1 tbsp. honey
1/2 tsp. cinnamon
1 tbsp. butter
Chopped parsley

Preheat oven to 400 degrees.

Combine raisins, apples and carrots in large bowl. Add the juice of 1/2 lemon, honey and cinnamon. Mix well. Turn mixture into baking dish. Place lemon slices on top and cover. Bake until carrots are tender, 40 minutes to 1 hour. Sprinkle with parsley.
