CHICKEN CACCIATORE 
3 lb. broiler fryer chicken, cut into serving pieces
Salt & pepper to taste
3 tbsp. shortening
1 env. (1 1/2 oz.) spaghetti sauce mix
1 can (6 oz.) tomato paste
1 3/4 c. water
1 can (4 oz.) sliced mushrooms
1 pkg. (8 oz.) spaghetti

Sprinkle chicken with salt and pepper. Heat pressure cooker. Melt shortening. Brown chicken on all sides. Meanwhile, combine envelope of spaghetti sauce mix with tomato paste and water. Pour over chicken. Add mushrooms with their liquid. Place cover on cooker and close securely. Cook 45 minutes. Serve over cooked and drained spaghetti.
