5 VEGETABLE CASSEROLE 
1/2 lb. sausage or ground beef
1/2 c. chopped onion
1/2 c. chopped bell pepper
1/2 c. chopped celery
2 c. sliced unpeeled zucchini
1 (14 1/2 oz.) can peeled canned tomatoes and juice
1 (8 oz.) can tomato sauce
8 oz. water
1 tsp. Italian seasoning

Brown sausage or beef. Mix all ingredients together. Place in casserole dish and bake until done. Serves 4-6.
