ZUCCHINI CHUNKS 
1 gal. zucchini, peel & cut in cubes
2 c. slaked lime
8 1/2 c. sugar
3 tbsp. mixed pickling spices
1 tbsp. celery seed
1 qt. vinegar
1 tbsp. salt

Use good size zucchini. Remove seeds, peel and cut into desired cube size. Put slaked lime in 2 gallons water. Let zucchini stand 24 hours in this water, stirring occasionally. Drain and rinse well.

Let stand 3 hours in clear water. Drain again and soak overnight in solution of vinegar, sugar, salt, celery seed and pickling spices. Bring to a boil and boil slowly 30 minutes. Pack in jars and seal. Process 15 minutes in boiling water bath.
