CHILI RELLENO PUFF 
6-7 eggs, separated
Salt and pepper to taste
2 tbsp. flour
1 (8 oz.) can Ortega green chilies, diced
1/2 lb. Jack cheese, grated
1 sm. can salsa sauce

Beat egg whites until stiff. Beat yolks and add salt, pepper and flour. Fold into the whites. Layer 1/2 egg mixture, chilies and cheese, then remaining egg mixture. Pour salsa sauce on top before serving. Bake at 350 degrees for 30 minutes or until set.
