CREAM CHEESE FRUITCAKE | |
1 (8 oz.) pkg. cream cheese 1/2 lb. butter 1 1/2 c. sugar 1 1/2 tsp. vanilla or rum 4 eggs 2 1/4 c. flour 1 1/2 tsp. baking powder 1 c. candied fruit 1/2 c. chopped nuts Blend cheese, butter, sugar, vanilla and eggs. Fold in flour, baking powder and then fruit and nuts. Bake in greased tube pan at 325 degrees for 1 hour and 20 minutes. Cool in pan a few minutes before removing. I sometimes cut it in 4 pieces and freeze some of it. |
