RICE PUDDING 
1/2 c. water
1/2 c. uncooked minute rice
3 eggs, slightly beaten
2 tsp. vanilla
1/2 c. raisins; optional
Cinnamon, to taste
1/4 tsp. salt
1/2 c. sugar
2 1/2 c. milk, scalded

Heat oven to 350 degrees. Heat water to boiling, remove from heat. Stir in rice. Cover; let stand about 5 minutes. Add all other ingredients and place in a buttered baking dish and bake until pudding seems done in center.

NOTE: For a richer pudding, you may replace milk with half and half or light cream.
