POLVERONES (MEXICAN WEDDING
COOKIES)
 
1 c. butter
1/2 c. powdered sugar
2 c. self rising flour
1 tsp. vanilla
1/2 c. finely chopped pecans

Cream butter, sugar and vanilla. Add flour and pecans. Shape dough into 1 inch balls. Place on ungreased cookie sheet. Bake at 350 degrees for 20 to 25 minutes, until lightly browned. Roll warm cookies in additional powdered sugar. Cool on wire racks with waxed paper beneath it, then roll again in powdered sugar. Yield: 36 cookies.
