QUINOA WITH MIXED MUSHROOMS 
1 cup quinoa
2 cups vegetable or chicken stock (depending on the main dish)
1 1/2 c chopped mushrooms I prefer a mix of portabella, morel, porcini, and button
2 lg shallots sliced
2 TBSP sliced scallions
2 TBSP butter

Soak quinoa for 30 minutes in water. Strain and toss in frying pan on medium heat with 1 tablespoon of butter to lightly toast. Transfer to pot and add the stock. Cook according to directions on the package. In the meantime saute the mushrooms and shallots in the other tablespoon of butter until most of the moisture has been removed. Add to the cooked quinoa.

Top with a few scallions. This is a great side for the days when you're sick of the the same old potatoes or rice.

I made this for supper this evening. I used Portabella mushrooms cut into large chunks, but I added just a little lite soy sauce as well. It was delicious, we ate it as a main course, along with fresh sliced tomatoes. Great Recipe! Thanks!
