POPOVER 
3 eggs
1 c. milk
3 tbsp. melted butter
1 c. sifted flour
1/2 tsp. salt

1. Preheat 375 degrees.

2. Butter well 9 x 3 muffin pan cups

3. Beat eggs, milk and melted butter, then gradually beat in flour and salt. Divide batter among the muffin pan cups.

4. Bake popover 40 minutes. Then remove from oven. Quickly cut small slit in side of each to let out steam, return to oven for 10 minutes or until tops are very firm, crisp brown.

5. Serve piping hot with butter.

Makes 9.
