ENDIVE SALAD 
1 firm endive
1 bunch scallions
1/2 lb. feta, crumbled
Salt & pepper to taste
4 tbsp. olive oil
1/2 lemon, juice of
12 Greek black olives (oil cured)

1. Wash endive - gently tear into bite size pieces. Trim and chop heads and stems of scallions.

2. In large salad bowl, place onions, endive and crumbled feta cheese.

3. Combine olive oil, lemon juice, salt and pepper; mix well. Pour enough salad dressing over salad greens to coat lightly. Toss well. Garnish with black olives. Serves 4.
