ROASTED TOMATO BRUSCHETTA 
8 plum tomatoes, chopped
4 cloves garlic, minced
2 tbsp. Emeril's Italian Essence
3 tbsp. olive oil
1/2 tsp. salt
1/2 c. shredded Parmesan cheese
12 slices toasted French bread
chopped basil leaves

In large roasting pan, combine tomatoes, garlic, Essence, olive oil and salt. Toss gently and bake at 375°F for 25 minutes or until slightly browned. Serve on toasted French bread, sprinkle with basil leaves, cheese and additional olive oil, if desired.

Makes 4 servings.
