EGGPLANT AND CHEESE 
1 c. drained, cooked eggplant
1 tbsp. butter
1 tbsp. flour
1 c. milk
1/2 c. grated cheese
1 egg, beaten

Make sauce of butter, flour, milk; add grated cheese and beaten egg. Mix with eggplant, sprinkle top with more grated cheese. Bake in greased baking dish for 25 to 30 minutes at 350 degrees. 4 servings.
