CATFISH PARMESAN | |
6 pan, dressed whole catfish or 3 1/2 lb. catfish nuggets 2 c. dry wheat bread crumbs 3/4 c. Parmesan cheese 1/4 c. chopped parsley 1 tsp. paprika or cayenne pepper 1/2 tsp. oregano 1/4 tsp. basil 1 tsp. salt 1/2 tsp. pepper, if not using cayenne 3/4 c. butter or olive oil garlic powder (for sprinkling) Combine bread crumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Sprinkle fish lightly with garlic powder. Dip catfish in melted butter or olive oil and roll in crumb mixture. Arrange fish in a well greased baking dish 14 x 9 x 2 inches. Bake at 375 degrees until fish flakes easily when tasted with a fork. Bake around 25 minutes. Serves 6. |
