PICKLED BEETS 
Beets
Vinegar
Sugar
Pic kling spices

Wash and cook beets until tender. Place beets in cold water and skins should come right off. Cut medium size beets in half and large beets into quarters. Cook 3 cups vinegar, 4 cups sugar, 2 tablespoons pickling spices until boiling. Add beets and heat through. Seal in jars along with juice.
