LEMON GELATIN CAKE 
1 box yellow cake mix
1 (3 oz.) pkg. lemon gelatin (or lemon instant pudding)
1/4 to 1/2 c. oil + 4 eggs
3/4 to 1 c. + 2 tbsp. water (apricot or pear nectar would work too)
Grated rind and juice of 1 lemon
1 c. powdered sugar

Mix cake mix as directed on box. Grease loaf pan. Bake at 325 degrees for 40 minutes. When you remove from oven punch holes in cake with fork. Pour lemon and sugar mixture over cake. Let stand in pan. Serve hot or cold. Serves 15-18.
