BAKED CHICKEN REUBEN 
8 boneless, skinless split chicken breasts
1/4 tsp. salt
1/8 tsp. pepper
16 oz. sauerkraut, drained
4 slices Swiss cheese
1 1/4 c. Thousand Island dressing
1 tbsp. chopped parsley

Place chicken breasts in greased baking pan and sprinkle with salt and pepper. Place sauerkraut over chicken; top with Swiss cheese. Pour dressing evenly over cheese. Cover with foil and bake at 325 degrees for about 1 1/2 hours. Sprinkle with chopped parsley. Makes 4 servings.
