IMPOSSIBLE PUMPKIN PIE 
2 tbsp. butter
1 (16 oz.) can pumpkin
1 (12 oz.) can light skim evaporated milk
2 eggs
3/4 c. sugar
1/2 c. Bisquick
2 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. allspice
1/8 tsp. nutmeg
1/8 tsp. ground cloves

High altitude - heat oven to 375 degrees. Spray 9 by 1 1/4 inch pie plate with no stick, cholesterol cooking spray. Place all ingredients in a large mixing bowl. Beat 2 minutes until smooth. Pour into plate. Bake until knife comes out clean (about 55 minutes). Makes 6 servings, about 256 calories per serving.
