BAKED SCALLOPS | |
1 1/2 lb. scallops 6 tbsp. butter (3/4 stick) 1/4 tsp. each salt and pepper 1 clove garlic, pressed 1 tsp. scraped onion 2 tbsp. minced parsley 2 tsp. lemon juice 2/3 c. soft bread crumbs Paprika Butter individual shells or ramekins. Cut scallops into 1/2 inch slices. Melt 3 tablespoons of the butter and mix in salt, pepper, garlic, onion, parsley, and lemon juice. Stir in scallops, coating them well, then divide the mixture among the buttered scallop shells. Preheat oven to 400 degrees. Melt the remaining 3 tablespoons of butter. Toss bread crumbs in it, and a scatter them on scallops. Bake shells 10-12 minutes. Sprinkle lightly with paprika and serve. Can also be done in one casserole dish, but allow a little longer cooking time. |
