CRISP SUGARED PECANS 
2 1/2 c. pecan halves
1 c. sugar
1/2 c. water
1 tsp. cinnamon
1 tsp. salt
1/2 tsp. vanilla

Place pecans in shallow pan and bake at 375 degrees for 15 minutes, stirring often. Combine remaining ingredients, except vanilla in saucepan. Boil without stirring to 236 degrees. Add vanilla. Stir in nuts gently until well coated and mixture begins to turn creamy. Pour onto buttered platter and separate as they cool. Good for mailing.
