BRUNCH POTATO CASSEROLE | |
2 lbs. Russet potatoes 1 (6 oz.) pkg. sliced fully cooked Canadian bacon 1/3 c. chopped green onion 3/4 - 1 c. shredded Cheddar cheese 5 eggs 1 c. milk 3/4 tsp. salt 1/4 tsp. pepper 1/2 tsp. marjoram Parsley Cook potatoes in jackets until tender. Peel and slice into 1/2" slices. Cut bacon slices in half. Butter 11" x 7" x 1 3/4" baking dish. Alternate slices of potato and Canadian bacon. Sprinkle onion and then cheese on top. Combine remaining ingredients and pour over all. Bake at 375 degrees for 30 to 40 minutes or until knife inserted in center comes clean. Can be made ahead and refrigerated before baking. |
