RICE PUDDING 
1 c. raw rice
1 c. water
1/2 stick butter
3/4 c. sugar
2 qts. milk
1 tsp. vanilla
1 c. milk
1 c. heavy cream
3 eggs, beaten
1/2 c. sugar
1 tsp. vanilla
Cinnamon and (or) nutmeg

In a large pot, combine rice, water and butter. Cook until liquid evaporates. Add sugar, 2 quarts milk and vanilla. Cook over medium heat until thick and creamy, about 1 hour, stirring so as to not burn. Add 1 cup milk and heavy cream. Beat eggs, sugar and vanilla together. Pour a little of hot mixture into the cold mixture and then add it to the pot of rice pudding. bring to a boil and season with nutmeg or cinnamon.
