RICE PUDDING 
3 1/2 c. scalded milk
1/4 c. raw rice
1/3 c. sugar
1/2 tsp. salt
1 tsp. vanilla
1/4 tsp. ground nutmeg
1/2 c. raisins (opt.)

Heat oven to 325 degrees. Combine all ingredients in a greased 1 quart casserole. Bake for 2 hours. When pudding has baked for 30 minutes, stir in brown crust that forms on top of pudding. Repeat at half hour intervals. Bake pudding without stirring the last half hour. Serve warm.
