MARZETTI 
3 lbs. pork or beef cubes (I use pork)
1/2 c. shortening
3 med. onions, chopped
3 qts. tomato juice
2 1/2 tbsp. salt
1 tsp. pepper
12 oz. mushrooms, sliced
1 1/2 lbs. medium noodles
2 c. Cheddar cheese, grated

Brown meat in hot shortening. Add onions and cook until slightly browned. Place in huge casserole or medium size roaster. Add tomato juice and seasonings. Cover. Bake at 350 degrees until meat is almost tender, a good hour at least. Add raw noodles and the mushrooms. Stir well. Bake another 30 minutes until noodles are done. Uncover; sprinkle on cheese. Bake until browned.
