QUICK CHICKEN CASSEROLE | |
3 c. chicken, cooked 1 c. celery, diced 1/2 c. onion, chopped 3/4 c. Cheddar cheese, shredded 1 can cream of chicken soup 1/2 c. mayonnaise 2/3 c. milk 1 (10 oz.) pkg. chopped frozen broccoli, cooked and drained 1/2 tsp. salt Pepper to taste 1/2 c. almonds or cashews (optional) Mix chicken, celery, onion, 1/2 cup cheese, mayonnaise, milk, soup and broccoli together, season with salt and pepper. Put in 2-quart greased casserole dish. Sprinkle with the remaining 1/4 cup cheese and top with nuts. Bake at 325 degrees for 30 minutes. Make another layer in the same order. Bake at 350 degrees for 1 hour covered. Bake another 15 minutes. |
