BLACKBERRY DUMPLINGS | |
4 tbsp. butter 1 c. milk 2 eggs 3 1/2 c. sugar 2 tsp. butter 3 tsp. vanilla 3 tsp. baking powder 4 c. water 1 1/2 qts. blackberries 1. Melt butter and allow to cool. Mix with the milk, eggs, one cup sugar and vanilla. Add dry ingredients. Do not over mix. 2. Combine water, 2 1/2 cups sugar and blackberries. Cook over medium heat until mixture thickens. 3. Drop dough by the spoonful or in little balls into blackberry mixture and cook until dough rises. 4. Test with fork; when it comes out clean, remove dumplings and continue to add dumplings until all dough is used. Serve warm with blackberry mixture. |
